JONNY CROCKETT replies: April and May immediately make me think of wild garlic. One of my favourite recipes is trout with wild garlic mash potatoes. A simple grilled trout with a creamy potato (with cheese) and chopped up wild garlic. I’ve also tried garlic ice cream and garlic beer.
